  1. 1 Combine black garlic, preserved lemon (make sure all seeds are removed), balsamic vinegar, and soy sauce in a high capacity blender (such as a Vitamix®) until black garlic and preserved lemon are pulverized into a smooth mixture. Add olive oil and blend until aioli thickens.

Instructions

  1. 1 Place bacon into a large cast iron skillet over medium heat and cook until fully browned, 7 to 10 minutes. Remove bacon to a paper towel-lined plate, but leave the bacon grease. Chop bacon when cool enough to handle.
  2. 2 Add 1/4 cup butter and black garlic clove to the bacon grease. Mash the black garlic thoroughly, then cook and stir until fragrant, 1 to 2 minutes. Add Brussels sprouts and remaining butter; season with salt and pepper. Cook, stirring only a couple of times, until sprouts are browned and tender, 5 to 7 minutes.
  3. 3 Remove from heat and add bacon and Parmesan cheese; stir until heated through and cheese is melted. Place into serving dish and cover with a lid if not serving immediately.

Instructions

  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.
  2. 2 Combine sugar, flour, cocoa powder, baking powder, baking soda, cinnamon, and salt in a large bowl.
  3. 3 Stir together mashed black garlic, oil, milk, sour cream, egg, and vanilla extract in a second bowl. Add to flour mixture and mix well. Add melted chocolate, stirring until well combined. Fold in chocolate chunks and chopped nuts. Spoon batter into the prepared muffin cups, filling each almost to the top.
  4. 4 Bake in the preheated oven until a toothpick inserted in center comes out clean, 22 to 26 minutes. Cool on a wire rack.

Instructions

  1. 1 Combine cauliflower and black garlic in the bowl of a food processor; process until finely "riced". Transfer to a bowl. Add flour, eggs, bread crumbs, baking powder, salt, black pepper, basil, parsley, oregano, rosemary, red pepper flakes, and onion powder. Stir until well combined.
  2. 2 Preheat an air fryer to 400 degrees F (200 degrees C). Line the air fryer basket with parchment paper and spray with cooking spray.
  3. 3 Drop cauliflower mixture onto the parchment paper using a large cookie scoop; flatten slightly with your fingers.
  4. 4 Air fry for 4 to 6 minutes, flip using a spatula, and continue cooking until patties are set, about 1 minute more. Remove from the air fryer and top each patty with 1/4 slice of Swiss cheese. Return to the air fryer and cook until cheese is melted, 30 to 40 seconds more.
