  3. 3 Sprinkle the flour mixture over the berry mixture.
  4. 4 Bake for 20 to 25 minutes until topping is light golden brown and fruit mixture is bubbly around the edges.

Instructions

  1. 1 Gather all ingredients.
  2. 2 Preheat the oven to 425 degrees F (220 degrees C) with the rack positioned in the upper third of the oven. Grease a baking sheet.
  3. 3 Peel sweet potatoes; cut into 1x3-inch wedges. Place wedges and soybean oil in a large bowl; toss lightly. Sprinkle with salt, pepper, garlic powder, and paprika; toss.
  4. 4 Arrange potatoes in a single layer on the prepared baking sheet, being sure not to overcrowd.
  5. 5 Bake in the preheated oven, turning occasionally, until tender and golden brown, 18 to 24 minutes. Cool 5 minutes before serving.

Instructions

  1. 1 Combine flour, oatmeal and baking powder in medium bowl. Whisk soymilk, eggs, brown sugar and soybean oil in large bowl until blended. Add flour mixture to soymilk mixture; stir just until blended. Stir in 2 cups berries.
  2. 2 Heat large skillet over medium heat; brush lightly with soybean oil. Pour 1/4 cup batter into hot skillet; cook until bubbles begin to burst. Turn and continue cooking for 1 to 2 minutes or until golden. Repeat with remaining batter. Serve with remaining berries and maple syrup, if desired.

  3. 3 Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

  1. 1 Preheat the oven to 400 degrees F (200 degrees C). Line two 12-cup muffin tins with paper liners.
