  1. 1 Soak 2 cups hickory wood chips in water for an hour or so.
  2. 2 Prepare the grill for indirect cooking, and position a drip pan under the grate. Drop a handful of soaked hickory over coals when ready to barbeque.
  3. 3 Brush grate lightly with oil. Position ribs on grill directly above the drip pan. Cover with onions. Close the lid, and cook for 1/2 hour. After the first 1/2 hour, brush the ribs liberally with barbeque sauce every 15 to 20 minutes for an hour. Add more coals and/or hickory chips as needed. Carve the ribs, and serve.

Instructions

  1. 1 Gather all ingredients.
  2. 2 Cut ribs into 4 equal portions.
  3. 3 Tear off 4 pieces of aluminum foil big enough to enclose each portion of ribs. Grease each piece of foil with cooking spray.
  4. 4 Brush ribs liberally with barbecue sauce; place each portion of ribs on a piece of foil. Wrap tightly and refrigerate for 8 hours to overnight.
  5. 5 Preheat the oven to 300 degrees F (150 degrees C). Bake ribs wrapped tightly in foil in the preheated oven for 2 ½ hours. Remove ribs from foil and serve with more sauce, if desired.

Instructions

  1. 1 Cut ribs into 2- or 3-bone portions. Bring a large pot of water to a boil; season with pinch each salt, black pepper, and red pepper flakes. Add ribs; boil for 20 minutes. Drain; let sit about 30 minutes
  2. 2 Meanwhile, preheat an outdoor grill for high heat and lightly oil the grate.
  3. 3 Lightly coat ribs with barbecue sauce. Cook on the preheated grill until achieve a nice grilled look, 5 to 10 minutes per side. Transfer ribs to a slow cooker.
  4. 4 Pour remaining barbecue sauce and 1 bottle beer over ribs; this should cover at least half the ribs. Cover slow cooker. Cook on High until meat is falling off the bone, about 3 hours, checking every hour or so; add more beer if needed to dilute sauce, stirring to ensure ribs are on top in sauce.

  1. 1 Place 3 fist-sized chunks of wood in a smoker according to manufacturer's directions. Preheat the smoker to 250 degrees F (121 degrees C).
  2. 2 While wood burns down, combine salt, black pepper, garlic powder, onion powder, chili powder, and cumin in a bowl; apply to both sides ribs.
  3. 3 Once thin blue smoke appears, place ribs in the smoker, bone-sides down; smoke for 2 hours.
  4. 4 Reduce heat to 225 to 250 degrees F (107 to 121 degrees C). Wrap ribs lightly in aluminum foil to retain juices; continue smoking for 1 ½ hours more.
  5. 5 Remove foil; continue to smoke until meat is tender but still stays on the bone, about 1 hour more, brushing lightly with barbecue sauce in the last 15 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

Instructions

  1. 1 Place ribs in a large pot, cover with water and add thyme, oregano, garlic powder, salt and pepper. Bring to a boil and simmer for 40 minutes.

  1. 1 Preheat an outdoor grill for medium heat and lightly oil the grate. Tear off 2 sheets of aluminum foil about 30 inches long; place onto a work surface.
  2. 2 Divide ribs in half; place each half on 1 sheet foil in a single layer. Spread Dijon mustard onto both sides of ribs. Combine brown sugar, paprika, garlic powder, onion powder, black pepper, and cumin in a bowl until thoroughly mixed; generously rub onto both sides of ribs.
  3. 3 Fold excess aluminum foil for each sheet to make a double-thick top layer; pinch and fold tops and sides together to completely enclose ribs in foil, leaving room for heat to circulate.
  4. 4 Place rib foil packets on the preheated grill, close the lid, and grill until ribs are tender and thoroughly cooked through, about 45 minutes. An instant-read meat thermometer inserted into the thickest part of a rib should read at least 160 degrees F (70 degrees C). Remove ribs from foil; discard foil.
  5. 5 Return ribs to the grill; brush each side with marinade. Grill until charred, good grill marks appear, and marinade cooks onto ribs, about 15 minutes more. Flip ribs; baste occasionally with marinade.

  1. 1 Peel membrane off the bone side of ribs, if desired. Poke meat all over with a fork; place ribs in a resealable plastic zip-top bag.

  6. 6 Grill ribs over medium-low to medium heat, brushing with the BBQ sauce, until sauce is thick and ribs are heated through, with some grill marks, 15 to 20 minutes. Do not overcook or they will become dry. Slice before serving.
