Instructions

  1. 1 Lay prosciutto slices on a large cutting board.
  2. 2 Place goat cheese into a small bowl and mix until creamy and spreadable. Lightly spread goat cheese on each slice of prosciutto. Top with a thin layer of fig preserves and sprinkle with crushed pine nuts.
  3. 3 Starting from one end, roll each prosciutto slice up into a tube. Place on a small platter and serve.

Instructions

  1. 1 Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. 2 Place the puff pastry sheet on a lightly-floured work surface and roll out to a 10x10 inch square. Using a 2-inch biscuit or cookie cutter, cut 16 rounds out of the dough
  3. 3 Transfer the pastry rounds to the baking sheet, and using your thumb, firmly press down into the center of each of each; this step is important. Fill each indentation with about 1/2 teaspoon of the cheese.
  4. 4 Bake in the preheated oven until flaky and golden brown, 8 to 10 minutes.
  5. 5 Meanwhile, spoon fig preserves into a small bowl and heat in the microwave until preserves are softened and starting to melt, about 1 minute.
  6. 6 Remove baking sheet from oven and allow to slightly cool for 2 minutes. Spoon some of the melted fig preserves on the top and garnish with a sprinkle of chopped thyme.

  1. 1 Preheat oven to 375 degrees F (190 degrees C).
  2. 2 Cream together shortening, eggs, sugar, and vanilla. Sift flour, soda, and baking powder. Add to egg mixture.
  3. 3 Grease a small cookie sheet with shortening. Pour 1/2 of the dough into pan and spread.
  4. 4 Pour fig preserves over the dough and gently spread. Drop rest of dough over figs. Place in oven. When mixture starts to melt and gets soft, spread the top. Bake for 40 minutes. Cool and then cut into 24 bars.

Instructions

  1. 1 Combine onion powder, garlic powder, smoked paprika, salt, and pepper in a small bowl. Rub spice mixture all over the pork tenderloin and let sit at room temperature for 20 to 25 minutes.
  2. 2 Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil. Spray foil with cooking spray.
  3. 3 On a clean work surface, lay bacon slices side by side, overlapping them slightly. Brush fig preserves on one side of the bacon. Place pork tenderloin on bottom end of the bacon slices and roll up so that tenderloin is wrapped in bacon. Place tenderloin, seam side down, on the prepared baking sheet.
  4. 4 Roast in the preheated oven for 15 minutes and remove pork tenderloin from oven.
  5. 5 Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  6. 6 Brush balsamic glaze all over the pork and return to the oven to broil until pork is slightly pink in the center, 5 to 7 more minutes. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Let rest for 5 minutes before slicing and serving
