Instructions

  1. 1 Heat a heavy pot over medium heat. Add ground beef and onion; cook and stir until beef is browned and crumbled and onion begins to turn translucent, about 5 minutes. Drain grease from pot.
  2. 2 Add beef broth, beans, tomatoes, corn, and rice; stir in buttery spread and bring to a boil. Reduce heat, cover, and simmer until rice is tender, about 7 minutes.
  3. 3 Let stand, off heat, at least 2 minutes, then stir. Top servings with cheese and sour cream.
