Instructions
- 1 Halve zucchini lengthwise. Scrape out and discard seeds; cut into chunks.
- 2 Transfer zucchini to a blender; add sugar, lemon zest, lemon juice, and mint. Cover the blender; blend until smooth. Strain mixture through a mesh sieve into a bowl; discard solids. Cover the bowl; refrigerate strained liquid until cold, 1 to 2 hours.
- 3 Pour mixture into an ice cream maker and freeze to desired consistency according to manufacturer's directions.
