Instructions
- 1 Combine peanut butter, chocolate chips, and butterscotch chips in a medium saucepan over low heat; stir until melted, about 15 minutes. Stir in oil.
- 2 Remove from the heat and mix in potatoes until well combined. Drop by rounded spoonfuls onto waxed paper-lined baking sheets.
- 3 Refrigerate until firm, about 2 hours.
