Instructions

  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Grease a baking pan.
  2. 2 Place chicken in a large bowl and add Buffalo wing seasoning and ranch dressing mix. Toss to coat.
  3. 3 Combine pepper Jack cheese and Colby-Monterey Jack cheese in a bowl; reserve 1 cup of cheese mixture. Reserve about 1/2 cup Buffalo sauce and pour the rest into a shallow bowl.
  4. 4 Coat both sides of a tortilla with Buffalo sauce and place on a plate. Add desired amount of chicken and cheese mixture. Roll tortilla and place seam-side down in the prepared baking pan. Repeat with remaining tortillas. Cover enchiladas with reserved cheese mixture and drizzle with reserved Buffalo sauce.
  5. 5 Bake in the preheated oven until cheese is melted and tortilla edges are starting to brown, about 20 minutes. Top with blue cheese before serving.

  1. 1 Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with foil.
  2. 2 Put seasoning mix in a plastic bag. Add chicken and shake to coat.
  3. 3 Roll 1 to 2 pieces of chicken at a time in mayonnaise to lightly coat, then roll in bread crumbs. Place chicken on the prepared baking sheet and dot each strip with 2 to 3 pats of buttery spread.
  4. 4 Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 15 minutes.
  5. 5 Serve with dressing on the side.

  1. 1 Rinse the shrimp with cold water and pat dry with paper towls. Add the shrimp and seasoning mix to a plastic bag and shake to coat.
  2. 2 Heat the butter, garlic, and red pepper flakes in a large skillet over medium heat until the butter has melted. Raise the heat to medium-high; when the butter begins to pop and sizzle add the shrimp to the pan. Cook and stir the shrimp until they are bright pink on the outside and the meat is no longer transparent in the center, about 4 to 5 minutes. Do not overcook.
  3. 3 Remove the pan from the heat and stir in the cilantro and lime juice. Garnish with lime wedges and serve hot.
