Instructions

  1. 1 Heat oil in a large skillet over medium-high heat.
  2. 2 Place fillets into hot oil. Drizzle with orange juice and lemon juice, then sprinkle fillets with lemon pepper. Cook until fish flakes easily with a fork, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

Instructions

  1. 1 Preheat the oven's broiler and set the oven rack about 6 inches from the heat source.
  2. 2 Place fillets on the broiler pan and squeeze lemon over fillets.
  3. 3 Broil in the preheated oven for 6 to 8 minutes.
  4. 4 Combine Parmesan, butter, Dijionnaise, garlic, and salt in a small bowl. Spread Parmesan mixture on top of fillets. Sprinkle with paprika.
  5. 5 Broil until topping is lightly browned and fish flakes easily with a fork, about 3 minutes.

Instructions

  1. 1 Preheat the oven to 500 degrees F (260 degrees C) with rack positioned slightly above middle of oven. Generously grease a 13x9-inch baking dish.
  2. 2 Combine cornmeal, bread crumbs, salt, paprika, dill, and black pepper in a shallow bowl. Pour milk into a separate bowl.
  3. 3 Dip orange roughy pieces into milk, then press into bread crumb mixture to coat on all sides. Gently toss pieces between your hands so any bread crumbs that haven't stuck fall away. Place breaded orange roughy in the prepared baking dish in a single layer; drizzle butter over top.
  4. 4 Bake in the preheated oven until fish flakes easily with fork, about 10 minutes.
