Instructions

  1. 1 Gather all ingredients.
  2. 2 Wrap red bean paste in aluminum foil and place in the freezer until solid, at least 1 hour.
  3. 3 Mix glutinous rice flour and green tea powder thoroughly in a microwave-safe bowl.
  4. 4 Stir in water, then sugar; mix until smooth.
  5. 5 Cover the bowl with plastic wrap and microwave for 3 minutes 30 seconds.
  6. 6 Meanwhile, remove red bean paste from the freezer and divide into 8 equal balls. Set aside.
  7. 7 Remove rice flour mixture from the microwave. Stir and heat, covered, for another 15 to 30 seconds.
  8. 8 Dust a work surface with cornstarch. Roll about 2 tablespoons of hot rice flour mixture into a ball. Flatten the ball and place one ball of frozen red bean paste in the center. Pinch and press the dough around the bean paste until completely covered.
  9. 9 Sprinkle with additional cornstarch and place mochi, seam-side down, in a paper muffin liner to prevent sticking.
  10. 10 Repeat Step 6 to make remaining mochi.

Instructions

  1. 1 Preheat oven to 375 degrees F (190 degrees C). Grease 2 baking sheets.
  2. 2 Beat sugar and butter with an electric mixer in a large bowl until smooth and creamy. Beat eggs, 1 at a time, into creamed butter until smooth; add vanilla extract and beat well.
  3. 3 Sift flour and baking powder together in a bowl. Gradually stir flour mixture into butter mixture, mixing well after each addition, until dough is smooth.
  4. 4 Generously flour your hands. Make walnut-size balls from the dough and press into 4-inch circles on a floured surface, making the circles thicker in the center and thinner on the edges. Spoon about 1 1/2 teaspoons koshi an in the center of each dough circle. Gather the edges together and pinch dough around the filling until sealed. Place dough balls, pinched-side down, on the prepared baking sheets about 2 inches apart. Brush dough balls with evaporated milk.
  5. 5 Bake in the preheated oven until tops are lightly browned, about 15 minutes.

  1. 1 Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch Bundt pan or a 9x13 inch baking pan.
  2. 2 In a large bowl, mix together the butter, sugar, eggs, vanilla and milk. Stir in the rice flour and baking powder. Pour the batter into the prepared pan. Drop red bean paste by scant teaspoonfuls onto the top of the cake. If spoonfuls are too big, the filling will sink to the bottom.
  3. 3 Bake for 1 hour and 10 minutes in the preheated oven, or until cake springs back when lightly touched. If using a Bundt pan, invert the cake onto a serving plate. Cake must be completely cooled before unmolding from Bundt pan, or it will be too soft to hold its shape. Serve small slices of this very rich cake at room temperature or slightly warmed.

  1. 1 Beat egg yolks and sugar together in a large bowl until pale yellow.
  2. 2 Bring milk to a boil in a saucepan. Remove from heat. Slowly stream milk into egg mixture while whisking until well combined.
  3. 3 Continue to cook, stirring constantly, until thickened but not boiling, about 10 minutes.
  4. 4 Stir red bean paste into thickened milk mixture. Transfer to a large bowl and let cool for several minutes. Stir cream into the slightly cooled mixture until smooth.

Instructions

  1. 1 Combine 1 1/2 cups sugar, lukewarm water, and 1 cup lukewarm milk in a very large bowl. Add yeast and let stand until yeast softens and begins to form a creamy foam, about 10 minutes.
  2. 2 Add 2/3 cup melted butter and 2 eggs to the bowl with the yeast mixture and mix well. Add 7 cups flour, 1 cup at a time and mix in; when dough comes together, start kneading until elastic but still sticky. Cover the bowl and let rise for 1 hour in a warm place.
  3. 3 Divide dough into 36 equal pieces; cover and let buns rise for 1 hour more.
  4. 4 While buns rise, beat 1 cup sugar and 1/2 cup butter together in a bowl. Add egg yolks, 4 tablespoons milk, and baking soda. Combine 2 cups flour and baking powder in a separate bowl; add to the sugar-egg yolk mixture. Refrigerate cookie topping at least 1 hour.
  5. 5 Flatten 1 bun in your palm; place a spoonful of red bean paste inside. Squeeze edges together to cover filling and roll bun back into a ball. Let filled buns rise again, 30 minutes to 1 hour.
  6. 6 Preheat the oven to 350 degrees F (175 degrees C).
  7. 7 Divide cookie topping into 36 equal balls. Flatten the balls and use a knife to make shallow hash mark lines resembling pineapple skin on each. Place 1 topping on each bun and place them on a baking sheet.
  8. 8 Bake in the preheated oven until golden, 15 to 20 minutes.
