  1. 1 Preheat the oven to 375 degrees F (190 degrees C).
  2. 2 Combine pork sausage, Italian sausage, pork rinds, and mozzarella cheese in a bowl. Mix well and form into about 48 equal-sized meatballs. Arrange meatballs in a shallow baking pan.
  3. 3 Bake in the preheated oven meatballs are nicely browned and an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 20 minutes.

Instructions

  1. 1 Place sausage and onion into a large stockpot over medium heat. Break sausage up with a spoon and cook until onion is translucent and sausage is browned and crumbly, 7 to 8 minutes. Drain if desired.

  1. 1 Gather the ingredients.
  2. 2 Heat olive oil in a large, deep skillet over medium heat. Add onion with a pinch of salt; cook and stir until onion has softened and turned translucent, about 5 minutes. Stir in sausage and cook until browned, 5 to 7 minutes.
  3. 3 Pour 1 1/2 cups chicken broth into sausage mixture and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon.
  4. 4 Add orecchiette pasta; cook and stir pasta in hot broth, adding remaining broth when liquid is absorbed, until pasta is cooked through and most of the broth is absorbed, about 15 minutes.

  1. 1 Make the dough: Pour water into the bowl of a stand mixer fitted with a paddle attachment. Sprinkle in yeast and let dissolve, about 10 minutes. Add olive oil, melted butter, sugar, salt, cornmeal, and most of the flour, in that order. Knead, stopping occasionally to scrape down the sides and adding more flour as needed, until smooth and elastic.
  2. 2 Transfer dough to a lightly floured work surface. Knead in extra flour if needed. Roll into a ball and transfer to a bowl greased with 1/2 teaspoon olive oil. Cover with a plate and let rise in a warm spot until doubled in volume, 1 to 2 hours.
  3. 3 While the dough is rising, simmer pizza sauce in a pot over low heat until very thick, 60 to 90 minutes.
  4. 4 Preheat the oven to 425 degrees F (220 degrees C).
  5. 5 Poke dough to deflate and turn out onto your work surface. Press and stretch out dough into a round shape 3 to 4 inches larger than a 12-inch cast iron skillet. Brush the skillet with 1 1/2 teaspoons olive oil. Place dough into the skillet; stretch and pull to evenly distribute it over the bottom and sides.
  6. 6 Apply fillings and toppings in order as follows: Lay provolone cheese over the bottom of the crust. Scatter fresh mozzarella over provolone, then add Italian sausage and firm mozzarella. Ladle pizza sauce generously over top. Grate Parmesan cheese over pizza sauce, then fold the crust edges in towards the center to seal in the sides. Drizzle 1 tablespoon olive oil over crust and center of pizza.
  7. 7 Bake in the center of the preheated oven until crust sounds hollow when tapped and pizza is beautifully browned, about 35 minutes. Let rest for 10 minutes before slicing.

  1. 1 To Make Dough: In a small bowl, dissolve sugar in 1 cup warm water; in a separate small bowl combine the yeast, 1/2 cup flour, and 1/2 cup warm water. Mix together and let rest in bowl for about 20 minutes, until foamy.

  3. 3 Preheat oven to 450 degrees F (230 degrees C). To Make Stuffing: In a large bowl combine the sausage, mozzarella cheese, Parmesan cheese, pepperoni, onion, bell pepper, oregano and garlic. Mix well.
  4. 4 Press half of the dough in the bottom and up the sides of a lightly greased deep dish pan. Bake crust in preheated oven for 4 minutes, then add the stuffing mixture to the bottom crust and cover with top crust; seal edges together with fingers, and trim excess. Slit top crust to allow steam to vent during baking; top with tomato sauce.
  5. 5 Bake on lower rack at 450 degrees F (230 degrees C) for 45 minutes, or until crust is golden brown. Remove from oven and allow to cool for 5 minutes, then cut and serve.
