Instructions

  1. 1 Preheat an oven to 375 degrees F (190 degrees C).
  2. 2 Heat the vegetable oil in a large skillet over medium heat.
  3. 3 Season the mahi mahi fillets with the thyme, salt, and black pepper; lay the seasoned fillets in the hot skillet. Cover the skillet and cook the fillets for 7 minutes, turn the fillets, and continue cooking the other side until the flesh flakes easily with a fork, 5 to 7 minutes.
  4. 4 Remove the mahi mahi to a cutting board and cut into bite-size pieces, removing any visible bones as you notice them.
  5. 5 Stir the cream of potato soup, milk, and mixed vegetables together in a saucepan over medium heat; season with salt and pepper. Allow the mixture to simmer, stirring occasionally, 5 minutes.
  6. 6 Gently fold the mahi mahi pieces into the soup mixture.
  7. 7 Line a 9-inch deep-dish pie plate with one of the prepared pie crusts.
  8. 8 Pour the soup mixture with the mahi mahi into the pie crust.
  9. 9 Lay the remaining pie crust atop the assembled pie. Seal the edges with wet fingertips.
  10. 10 Bake in the preheated oven until the crust is a golden brown and the pie is heated through, 40 to 45 minutes. Allow to cool 10 to 15 minutes before serving.

  1. 1 Preheat the oven to 450 degrees F (230 degrees C). Set a wire rack on a rimmed baking sheet.
  2. 2 Rinse and scrub potatoes, then prick with a fork. Drizzle with olive oil and sprinkle with salt. Set on the prepared rack.
  3. 3 Bake potatoes in the preheated oven until the internal temperature is 205 to 212 degrees F (96 to 100 degrees C), about 50 minutes.
  4. 4 While potatoes are baking, remove meat from rotisserie chicken; discard skin and bones. Pull or cut meat into chunks and keep warm.
  5. 5 Prepare Alfredo sauce: Melt butter in a skillet over medium heat until sizzling. Add garlic in a single layer; cook until soft and fragrant but not brown, about 1 minute. Reduce heat and pour in half-and-half and cream; whisk to incorporate. Add Parmesan cheese and pepper and continue to whisk, until cheese is melted.
  6. 6 Place vegetables in a microwave-safe bowl. Microwave on high power until warm, about 3 minutes. Chop vegetables into bite-sized pieces if desired, and mix with chicken.
  7. 7 When potatoes are finished baking, remove from the oven. Cut a slit into each potato with a fork or a knife, leaving 1/2 inch uncut on edge. Use both hands to press each potato in towards the center so it opens up. This will help let you stuff the potato.
  8. 8 Top potatoes with chicken mixture and drizzle with Alfredo sauce.

  1. 1 Preheat oven to 350 degrees F (175 degrees C). Prepare a casserole dish with cooking spray.
  2. 2 Heat olive oil in a skillet over medium-high heat. Saute onion and garlic in hot oil until the onion is tender, about 5 minutes; add ground beef and continue to cook while breaking beef into small pieces with a wooden spoon until the beef is completely browned, 5 to 7 minutes. Season beef mixture with the taco seasoning mix.
  3. 3 Stir beef mixture, rice, vegetables, kidney beans, 1 cup Cheddar cheese, salsa, and olives together in the prepared casserole dish. Sprinkle remaining cheese over the mixture.
  4. 4 Bake in preheated oven until the cheese is melted and the dish is hot in the center, about 30 minutes.
