  1. 1 Cut kabocha squash in half. Scoop out the seeds and any stringy flesh. Remove the stem and peel the outer skin. Dice the flesh.

  4. 4 Use a slotted spoon to scoop the gnocchi out of the water and into the sauce. Use a bit of cooking water to thin out the sauce, if necessary. Toss to coat the gnocchi. Do not stir; this could break or deform the gnocchi.
  5. 5 Divide the gnocchi among 5 plates. Top each plate with a pinch of nutmeg and 1 tablespoon Grana Padano cheese.

  5. 5 Bring a large pot of lightly salted water to a boil, and cook the ravioli in small batches for about 8 minutes, or until al dente. Drain, and rinse under cold water.
  6. 6 Place the marinara sauce in a saucepan, and cook until heated through. Serve ravioli topped with marinara sauce and remaining Asiago cheese.

  6. 6 Cut dough into 1 ½-inch squares. Drop 1 teaspoon ricotta filling in middle of each square. Brush edges with water; fold over diagonally into a triangle shape. Press well to squeeze out any air. Stretch 2 ends of triangle, fold together, wrapping them around your finger; seal. Gently fold back top corner.

Instructions

  1. 1 Bring a large pot of salted water to a gentle boil.
  2. 2 Meanwhile, combine ricotta cheese, 1/2 cup Parmigiano-Reggiano cheese, egg, salt, pepper, and nutmeg in a bowl; mix well. Add in 00 flour.
  3. 3 Sift in semolina flour and carefully fold into ricotta mixture until semolina flour is just incorporated and a soft dough forms.
  4. 4 Place dough on a lightly floured work surface and cut dough into 4 pieces. Roll each section into a long rope about 3/4 inch in diameter.
  5. 5 Cut the rope into 1-inch long pieces with a butter knife. Use your forefinger and press down into the middle of each gnudi to create a small dimple. Set the gnudi on a lightly floured baking sheet.
  6. 6 Drop gnudi in batches into the simmering water and cook until they float to the surface, less than 1 minute.
  7. 7 Drain gnudi and transfer to bowls.
  8. 8 Meanwhile, heat marinara sauce in a saucepan until hot, about 5 minutes.
