Instructions

  1. 1 Place coconut in a skillet over medium-low heat and toast, stirring constantly until lightly browned, 3 to 4 minutes. Set aside 1/2 teaspoon for garnish.
  2. 2 Combine toasted coconut, coffee ice cubes, coffee, coconut milk, 2 tablespoons chocolate syrup, and sweetener in a blender; blend until icy and frothy. Pour into a large glass and top with whipped topping, reserved toasted coconut, and remaining chocolate syrup.

Instructions

  1. 1 Preheat the oven to 350 degrees F (175 degrees C).
  2. 2 Combine melted butter, pecans, stevia, cinnamon, and salt in a bowl. Press into the bottom of a 10-inch pie pan.
  3. 3 Bake crust in the preheated oven for 5 minutes. Remove from the oven and increase temperature to 425 degrees F (220 degrees C).
  4. 4 Combine pumpkin puree, eggs, sweetener, ginger, nutmeg, allspice, and cloves in a bowl and mix completely. Pour filling into pie crust.
  5. 5 Bake in the hot oven for 15 minutes. Reduce temperature to 350 degrees F (175 degrees C). Continue baking until a knife inserted into the pie comes out clean, 50 to 60 minutes more. Cool for 1 hour before refrigerating. Refrigerate for 2 to 3 hours before serving.

Instructions

  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Line a loaf pan with parchment paper.
  2. 2 Place coconut butter and macadamia nuts in a food processor and process on high to achieve a part-butter, part-chunky nut meal. Reduce speed to medium-low and add 1 egg. Run processor to combine, about 10 seconds. Add remaining eggs, one at a time, blending until mixture is creamy.
  3. 3 Turn off the food processor and add stevia, baking soda, and salt; process to combine, 10 to 15 seconds. Scrape down the sides of the bowl and process until mixture is evenly blended. Pour in lemon juice and reduce speed to low; blend well. Scrape the sides of the bowl again and mix once more to thoroughly combine.
  4. 4 Pour mixture into the prepared loaf pan.
  5. 5 Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes. Let cool before transferring to a wire rack.
