  3. 3 Place the bowl on a cookie sheet; cover loosely and set in a warm place to ferment for 4 to 8 days. Depending on temperature and humidity, times may vary. The starter is ready when bubbly and pleasantly sour smelling. If it's colored at all (pink, orange, etc.), throw it out and start over.

  1. 1 Preheat the oven to 250 degrees F (120 degrees C). Line a baking sheet with parchment paper. Combine flour and salt in a bowl. Add water a few tablespoons at a time, mixing well after each addition, until dough comes together.
  2. 2 Knead dough on a lightly floured surface until smooth, about 10 minutes. Wrap in plastic; rest for 20 minutes.
  3. 3 Transfer dough to a floured work surface; knead until soft and pliable.
  4. 4 Roll out dough to ⅛-inch thickness. Cut into desired shapes with festive cookie cutters.
  5. 5 Transfer ornaments to the prepared baking sheet. Make a small hole in each for hanging using a toothpick or skewer.

  2. 2 Measure flour into the processor with the regular blade attached. Add chilled and cubed shortening and unsalted butter. Add salt, close the lid, and pulse three times with three counts per pulse to lightly mix the ingredients.
  3. 3 With the motor running, pour ice water into the food processor bowl just until the dough just starts to get noticeably crumbly. Don't wait until it is a big clump or it will be way too wet and will turn out tough.
  4. 4 Transfer the crumbly dough into a bowl, and form it into a ball with your hand, squeezing it a bit to make it stick together. If it just won't form a ball, add a tiny bit more water.
  5. 5 Wrap dough in wax paper or plastic wrap; chill dough in the refrigerator for at least 30 minutes before using in your favorite pie recipe.

  1. 1 Thoroughly dissolve yeast in warm water in a large glass or plastic container until foamy, about 5 minutes. Gradually stir 2 cups flour and 1/4 cup sugar into yeast mixture in the container until smooth, about 2 minutes. (Do not use aluminum utensils). Cover loosely and store in a warm place overnight.

  6. 6 On the fifteenth day it is ready to be used for baking. Reserve one cup of the starter in the refrigerator and continue to follow the stir and feed cycle: stir once daily for four days, feed on the fifth day, and use on the tenth day.
