Instructions

  1. 1 Preheat the oven to 400 degrees F (200 degrees C). Lightly grease a 9x13-inch baking pan with 1/2 of the avocado oil.
  2. 2 Combine mushrooms, spinach, onion, and garlic in the bowl of a small food processor or blender and pulse several times until chopped into very small pieces, but not pureed.
  3. 3 Place ground chicken in a bowl. Add chopped vegetables, chicken base, salt, and pepper. Mix until vegetable pieces are evenly distributed. Divide mixture into 5 evenly sized portions and shape into patties.
  4. 4 Place patties onto the prepared baking sheet and lightly brush with remaining avocado oil.
  5. 5 Bake in the preheated oven for about 20 minutes. Turn on the broiler and broil each side until browned, 1 to 2 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  6. 6 Place each chicken burger on a bun.

  1. 1 Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking pan.
  2. 2 Combine the turkey, chicken, sausage, and egg in a large bowl. Stir in the saltine crackers, 1/2 cup barbeque sauce, 1 tablespoon of mustard, liquid smoke, parsley, dried onion, onion powder, garlic salt, and seasoned salt; mix well. Press into the prepared pan.
  3. 3 Bake meatloaf in preheated oven for 25 minutes. Combine the brown sugar with the remaining 2 tablespoons of barbeque sauce, and 1 tablespoon of mustard to make a glaze. Remove meatloaf from oven; brush with glaze. Return the meatloaf to the oven, and bake until no longer pink in the center, about 25 additional minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (75 degrees C).

Instructions

  1. 1 Mix butter, parsley, and garlic together in a bowl until well combined. Divide mixture into 12 equal parts on a baking sheet. Freeze until solid, about 20 minutes.
  2. 2 Shape ground chicken into 12 balls. Make a deep thumbprint in the center of each ball. Place a piece of frozen herbed butter in center, wrapping meat around it until fully covered. Repeat with remaining balls.
  3. 3 Beat eggs in a bowl. Combine panko, paprika, salt, and pepper in a separate bowl.
  4. 4 Dip 1 ground chicken ball in beaten eggs, then in seasoned bread crumbs. Dip ball back into egg and in seasoned bread crumbs once more. Repeat with remaining balls. Place on a baking sheet and freeze for 10 minutes.
  5. 5 Preheat an air fryer to 400 degrees F (200 degrees C). Place half of the balls in the air fryer basket and spray with cooking spray.
  6. 6 Cook for 5 minutes. Flip balls over with tongs and spray again with cooking spray. Cook for 5 minutes more. Repeat with remaining chicken balls.

  1. 1 Combine 4 tomatoes, 1/2 an onion, and garlic in a blender. Blend until smooth.
  2. 2 Heat oil in a soup pot over medium heat. Add blended tomato mixture; cook until mixture changes color, about 5 minutes. Add chicken stock, reduce heat, and simmer while you prepare meatballs.
  3. 3 Place ground chicken in a bowl. Add 3 chopped tomatoes, chopped onion, egg, rice, mint, oregano, salt, and pepper. Mix well with your hands until mixture is uniform. Take about 1/4 cup of mixture and form into round meatballs using wet hands. Place on a baking sheet. Repeat with remaining chicken mixture.
  4. 4 Bring stock mixture to a boil. Place a meatball into a ladle and submerge into boiling stock. Remove the ladle and repeat with remaining meatballs.
  5. 5 Place zucchini, chayote, and carrots into stock. Bring to a boil again. Lower heat, season with salt, and cover. Simmer until meatballs are no longer pink in the center and vegetables are soft, about 30 minutes.
