Instructions
- 1 Brown ground beef in a large pot over medium-high heat until no longer pink, breaking up beef while cooking. Drain off excess grease, leaving just enough to coat bottom of the pot.
- 2 Add Polish sausage, onion, tomatoes, tomatillos, Anaheim chiles, yellow wax peppers, jalapeño chile peppers, and garlic; stir to combine. Simmer over medium heat until mixture softens, about 20 minutes.
- 3 Stir in pinto beans, kidney beans, vinegar, pimentos, and tomato sauce; cover and simmer over medium heat until flavors meld, about 30 minutes.
