Instructions

  1. 1 Line a baking sheet or plate with waxed paper.
  2. 2 Melt chocolate in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula.
  3. 3 Beat confectioners' sugar, egg substitute, and butter together in a bowl with an electric mixer until smooth and creamy. Add melted chocolate and beat until incorporated. Beat mint extract and vanilla extract into chocolate mixture until light and fluffy.
  4. 4 Drop chocolate mixture by the heaping teaspoonful onto prepared baking sheet. Chill in the refrigerator until firm, at least 4 hours.

Instructions

  1. 1 In a large bowl, cream 1 1/3 cups sugar with salt and 1/2 cup butter or margarine. Blend mint extract, 2 tablespoons milk, and remaining sugar into mixture. Gradually stir remaining milk into frosting until desired spreading consistency is reached.
  2. 2 Melt and stir unsweetened chocolate and 2 tablespoons butter or margarine together in a microwave, or in a double boiler. Double this glaze, if desired.
  3. 3 Frost cake. Pipe a frosting scallop at the top edge of cake to keep glaze from dripping down the sides of cake. Pour glaze over the top of cake. Chill until glaze has set.

Instructions

  1. 1 Beat 1/2 cup butter in a large bowl until creamy. Add sugar and beat until mixed well. Beat in egg and mint extract.
  2. 2 Sift flour, cocoa, and salt together into a small bowl. Add flour mixture, in two portions, into creamed mixture, beating well after each addition.
  3. 3 Divide dough in half. Roll dough on a lightly floured surface into two 1 1/2-inch diameter cylinders. Wrap each cylinder in waxed paper; refrigerate 5 hours.
  4. 4 Preheat the oven to 350 degrees F (175 degrees C). Place both cylinders in the freezer 30 minutes before baking.
  5. 5 Working with one cylinder at a time, slice 1/4-inch-thick pieces with a very sharp knife. Place on cookie sheets about 1 1/2 inches apart.
  6. 6 Bake in the preheated oven, 10 to 12 minutes.
  7. 7 Melt chocolate and 1/4 cup butter in a double boiler or the microwave. Drizzle over warm cookies. Place cookies on a wire rack to cool and harden completely.

Instructions

  1. 1 Preheat the oven to 350 degrees F (175 degrees C).
  2. 2 Cream sugar, butter, and lime zest together in a medium mixing bowl with an electric mixer until fluffy. Add eggs, fully incorporating 1 at a time. Mix in vanilla extract, mint extract, and rum extract.
  3. 3 Sift flour, baking powder, and salt together in a separate bowl. Mix into the egg mixture about 1/3 at a time, making sure flour is fully incorporated before adding the next batch.
  4. 4 Let chill in a refrigerator to allow the lime zest to impart greater flavor into the batter, up to 1 hour. Remove and allow to return to room temperature, about 20 minutes.
  5. 5 Spoon tablespoons of batter onto ungreased baking sheets, leaving about 2 inches between each cookie.
  6. 6 Bake in the preheated oven until edges are light golden brown, about 10 minutes, turning halfway through baking time. Allow to cool on the cookie sheets.

Instructions

  1. 1 Preheat the oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking pan.
  2. 2 Combine flour, baking soda, and salt in a medium bowl.
  3. 3 Combine sugar, butter, and water in a pot over medium heat; bring to a boil. Immediately remove from the heat and add 1/2 of the semisweet chocolate, vanilla extract, and mint extract. Stir until smooth and chocolate has melted. Transfer to a large bowl and allow to cool for 10 minutes.
