• ✓ absinthe
• sugar
• water

Instructions

1. 1 Place sugar cube on an absinthe spoon or in a small strainer set over a glass. Pour absinthe over sugar cube into the glass.
2. 2 Light sugar cube on fire and allow sugar to caramelize for 10 to 15 seconds. Slowly pour water over sugar cube until it dissolves and drink begins to turn opaque. Stir to combine.

• lillet blanc
• cointreau
• lemon juice
• maraschino cherry

Instructions

1. 1 Place ice in a cocktail shaker. Pour in gin, Lillet, Cointreau, and lemon juice. Spoon absinthe in a cocktail glass, and swirl to coat sides of glass. Shake cocktail, and then strain into the glass. Garnish with a Maraschino cherry.

• sour mix
• white sugar

Instructions

1. 1 Chill the absinthe glass, a spoon and the absinthe in the freezer for at least four hours. Chill water in refrigerator.
2. 2 Set the spoon upon the chilled absinthe glass. Place the sugar cubes on the spoon. Pour absinthe over the sugar cubes. Pour chilled water over sugar cubes. Pour sour mix over remainder of sugar cubes. If any sugar is left on spoon, dump it into the glass and stir.
