  2. 2 Place walleye fillets, skin-side down, in the center of one aluminum foil square. Brush melted butter over fillets, then sprinkle with seasoned salt and seasoning blend. Place the second aluminum foil square over top, then fold all edges together to seal, forming a secure packet.

Instructions

  1. 1 Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  2. 2 Place two walleye fillets onto the center of a sheet of heavy-duty aluminum foil. Drizzle with 2 tablespoons melted butter and 2 tablespoons lemon juice, season with salt and pepper, and place 1/2 of the onion rings over top. Bring the sides of the foil over the fish and fold several times, then roll up the ends, making an airtight pouch. Repeat with the remaining ingredients to make another pouch.
  3. 3 Place pouches onto the preheated grill and cook until fish is no longer opaque in the center and flakes easily with a fork, 15 to 20 minutes.

  1. 1 Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.

  1. 1 Stir the chicken stock, water, and lemon juice in a large pot with the onion, garlic, ginger, and parsnips. Season with thyme, red pepper flakes, salt, and pepper. Bring to a simmer over medium-high heat, and cook until the parsnips are tender and the onions are translucent, about 10 minutes.
  2. 2 Remove and discard the thyme sprigs. Stir in the honey to your desired level of sweetness. You don't want the broth too sweet. Lower the heat to a gentle simmer, and stir in the walleye and bean sprouts. Cook gently for 5 minutes, then add the basil and green onion. Continue cooking until the fish is flaky and opaque, about 5 minutes more. Season to taste with salt and pepper. Garnish with mint leaves to serve.
