Instructions

  1. 1 Preheat the oven to 350 degrees F (175 degrees C).
  2. 2 Mix together chicken, chilies, and salsa in a large bowl until well combined. Set aside.
  3. 3 Stir together whipping cream and salt in a wide, shallow dish until well combined. Set aside.
  4. 4 Heat oil in a large, heavy skillet over medium-high heat. Fry each tortilla in hot oil until blistering, 2 to 4 seconds, then immediately dip into cream mixture.
  5. 5 Fill fried tortillas with chicken mixture. Roll and place flap-side down in a baking dish. Pour remaining cream mixture over tortillas and sprinkle with cheese.
  6. 6 Bake uncovered in the preheated oven until cheese is melted, 15 to 20 minutes.

Instructions

  1. 1 Preheat the oven to 350 degrees F (175 degrees C).
  2. 2 Mix turkey with 1/2 cup salsa, 1/2 cup sour cream, 1/2 package Cheddar cheese, and 1/2 package of Monterey Jack cheese in a bowl until well combined. Fill tortillas evenly with turkey mixture, roll into enchiladas, and place in a 9x13-inch pan.
  3. 3 Mix remaining 1 1/2 cups salsa, and 1 cup sour cream together; pour over enchiladas. Top with remaining 1/2 package Cheddar and 1/2 package Monterey Jack cheese.
  4. 4 Bake in the preheated oven until cheese is bubbly and enchiladas are heated through, 30 to 40 minutes.

Instructions

  1. 1 To Make Sour Cream Mixture: In a blender or food processor, puree cilantro, sour cream, jalapeno salsa and 1/2 can of the green chile salsa. Set aside.
  2. 2 To Make Chicken Mixture: In a large bowl, combine shredded chicken, onion and the remaining 1 1/2 cans of green chile salsa. Mix well.
  3. 3 Preheat oven to 350 degrees F (175 degrees C).
  4. 4 Heat tortillas in conventional or microwave oven until soft. Pour enough of the sour cream mixture into a 9x13 inch baking dish to coat the bottom. Place 2 heaping tablespoonfuls of the chicken mixture in each tortilla, roll up and place seam side down in the baking dish. Pour remaining sour cream mixture over all and top with shredded cheese.
  5. 5 Cover dish tightly with aluminum foil and bake at 350 degrees F (175 degrees C) for about 30 minutes, or until dish is heated through and bubbling.

Instructions

  1. 1 In a large skillet over medium high heat, brown the pork in oil, doing so in 2 to 3 batches.
  2. 2 Place the meat in 3 to 4-quart covered casserole and add celery, tomatoes, chilies, and garlic.
  3. 3 Add about 1 cup chicken broth or water to skillet pork was cooked in, stirring over high heat to scrape up browned bits on bottom and bring to boil. Add to pot with enough additional water or broth to barely cover the ingredients. Cover and simmer until stew is thick and meat very tender, about 1 1/2 hours. Add salt to taste before serving. If stew is not hot enough, add a bit of jalapeno salsa.

Instructions

  1. 1 Preheat oven to 350 degrees F (175 degrees C).
  2. 2 Heat oil in a skillet over medium-high heat; saute green chile peppers, onion, bell pepper, corn, black beans, and garlic until onion and bell pepper are tender, 5 to 7 minutes. Remove skillet from heat.
  3. 3 Stir chicken, 1/2 cup enchilada sauce, and black pepper into vegetable mixture.
  4. 4 Spread 1/4 cup enchilada sauce in the bottom of an 11x17-inch casserole dish.
  5. 5 Lightly coat 1 side of 18 tortilla quarters with sour cream and arrange, sour cream-side up, in the casserole dish. Spread 1/2 of the chicken mixture over tortilla layer.
  6. 6 Stir green chile salsa into the remaining chicken mixture.
  7. 7 Sprinkle 1/2 cup Mexican cheese blend over chicken mixture layer in the casserole dish; top with 10 tortilla quarters. Pour 1/4 cup enchilada sauce over tortilla layer and cover with chicken-salsa mixture; add 1/2 cup Mexican cheese blend.
  8. 8 Lightly coat 14 tortilla quarters with sour cream and arrange, sour cream-side down, over the cheese layer. Spread 1 cup enchilada sauce over tortillas and top with remaining cheese.
  9. 9 Bake in the preheated oven until cooked through and cheese is bubbling, 20 to 25 minutes.
