Instructions

  1. 1 Place roast in a roasting pan and pour stout over top. Cover the pan with plastic wrap and marinate in the refrigerator, 8 hours to overnight, turning once.
  2. 2 When ready to cook, preheat the oven to 250 degrees F (120 degrees C).
  3. 3 Transfer roast to a cutting board and pat dry. Leave stout in the baking pan.
  4. 4 Heat olive oil in a large skillet over medium-high heat. Sear roast for 2 to 3 minutes per side; transfer to a plate.
  5. 5 Crush rosemary, thyme, steak seasoning, and pepper with a mortar and pestle. Add minced garlic and stir to make a paste. Spread paste over all sides of roast. Place roast back into the roasting pan with stout, and cover loosely with foil.
  6. 6 Bake in the preheated oven for 2 hours. Add potatoes to the roasting pan and remove the foil. Continue to bake until an instant-read thermometer measures 145 degrees F (65 degrees C) for medium, about 1 more hour, or to desired degree of doneness. Remove from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 20 minutes before slicing.
  7. 7 While the roast is resting, pour pan juices into a pot. Bring to a boil over medium heat, then reduce the heat and simmer until juices have reduced and thickened, about 10 minutes. Season to taste with salt and pepper. Strain and serve with beef and potatoes.

Soak hickory chips in bourbon with enough water to cover. Rub the roast liberally with steak seasoning, being sure to coat all surfaces.
  2. 2 When the coals are ready, place the roast on the top grate. Throw a few handfuls of soaked hickory chips onto the fire, and close the lid. Check the fire every 45 minutes or so, adding more charcoal as needed to keep the fire hot. Every time you check the fire, add more wood chips. Cook for 8 to 10 hours, or to your desired doneness. Use a meat thermometer to check the roast. The meat tastes best when rare: 145 degrees F (65 degrees C), but cook to your liking.

  1. 1 Place the flank steak on a cutting board with the short end closest to you. Starting from one of the long sides, cut through the meat horizontally to within 1/2 inch of the opposite edge. (You can also ask your butcher to butterfly the flank steak for you instead of cutting it yourself.)
  2. 2 Mix the soy sauce, olive oil, and steak seasoning together in a gallon-sized resealable plastic bag. Marinate flank steak in the refrigerator 4 hours to overnight.
  3. 3 Preheat oven to 350 degrees F (175 degrees C). Grease a glass baking dish.
  4. 4 Lay out the flank steak flat in front of you with the grain of the meat running from left to right. Layer the provolone across the steak, leaving a 1-inch border. Arrange the bacon, spinach, red pepper, and mushrooms across the cheese covered steak in stripes running in the same direction as the grain of the meat. Roll the flank steak up and away from you, so that when the roll is cut into the pinwheel shape, each of the filling ingredients can be seen. Roll firmly, but be careful not to squeeze the fillings out the ends. Once rolled, tie every 2 inches with kitchen twine.
  5. 5 Place in prepared baking dish, and bake in preheated oven for one hour, or until the internal temperature reaches 145 degrees F (65 degrees C). Remove from the oven and let rest for 5 to 10 minutes before cutting into 1 inch slices. Be sure to remove the twine before serving!

  3. 3 Combine ground beef, Worcestershire sauce, and steak seasoning in a large bowl; do not over mix. Form into 4 patties. Press thumbprint into middle of each patty (to keep from shrinking as they cook).
  4. 4 Cook on the preheated grill until desired doneness, about 6 minutes per side. An instant-read thermometer inserted into centers should read at least 160 degrees F (71 degrees C). Keep grill on.
  5. 5 Top each burger with 2 strips bacon and 1 slice Cheddar cheese; close lid and grill until cheese is melted, about 1 minute. Transfer patties to a plate. Keep grill on.
  6. 6 Toast buns on the preheated grill, buttered-sides down, until browned, about 1 minute. Transfer buns to a plate. Place 1 patty on bottom half of each bun.
  7. 7 Heat drippings in the skillet over medium-high heat. Crack eggs into the skillet; cook until whites are cooked but yolk is still runny, about 4 minutes. Place 1 egg on top of each patty. Top with lettuce, onion, avocado, and top buns, buttered-sides down.
