Instructions
- 1 Preheat the oven to 375 degrees F (190 degrees C).
- 2 Coat a large skillet with cooking spray. Add zucchini and yellow squash; cook over medium heat until crisp-tender, stirring frequently, about 5 minutes. Set aside.
- 3 Whisk eggs and salad dressing together in a large bowl until well combined; stir in zucchini mixture, onion, five-cheese blend, bell pepper, Parmesan cheese, salt, and black pepper. Transfer to an 8-inch square baking dish.
- 4 Bake until center is set and edges are lightly browned, 35 to 40 minutes.
