Instructions

  1. 1 Season chicken thighs with salt and pepper.
  2. 2 Turn on a multi-functional pressure cooker (such as Instant Pot) and select Sauté function. Heat sesame oil in the pot. Add chicken thighs and sauté until browned on the first side, 3 to 4 minutes. Add garlic and flip chicken, cooking until the other side is browned and garlic is fragrant, 3 to 4 minutes more. Hit Cancel and transfer chicken to a plate using tongs or a slotted spoon.
  3. 3 Pour 4 tablespoons water into the pot and use a wooden spoon to scrape any browned bits from the bottom. Whisk together soy sauce, hoisin sauce, and honey in a small bowl until smooth. Return chicken to the pot and pour sauce over the top.
  4. 4 Close and lock the lid. Select high pressure according to manufacturer's instructions; set the timer for 10 minutes. Allow 6 to 10 minutes for pressure to build.
  5. 5 Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. Unlock and remove the lid. Remove chicken with tongs or a slotted spoon and set aside.
  6. 6 Mix remaining 2 tablespoons water with cornstarch in a small bowl until smooth. Turn on Sauté function and whisk cornstarch slurry into sauce. Simmer until sauce thickens, about 2 minutes. Cancel Sauté function.
  7. 7 Return chicken to sauce, sprinkle with green onions and sesame seeds, and toss everything together.

  1. 1 Combine pineapple, chicken stock, brown sugar, soy sauce, cider vinegar, ginger, garlic powder, and black pepper in a bowl; stir until brown sugar is dissolved. Place chicken thighs in a pressure cooker; gently stir in pineapple mixture to coat.
  2. 2 Close cooker securely and place pressure regulator over vent according to the manufacturer's instructions. Bring the pressure cooker up to high pressure over high heat, (steam will escape in a steady flow and make a whistling sound), then reduce the heat to low until regulator is gently rocking, maintaining high pressure. Cook for 20 minutes.
  3. 3 Stir cornstarch into cold water; set aside.
  4. 4 Release pressure using the quick-release method according to the manufacturer's instructions. Unlock and remove the lid. Transfer chicken to a serving dish using a slotted spoon; cover with aluminum foil and set aside. Whisk cornstarch mixture into sauce, bring to a boil, and cook, stirring frequently, until sauce has thickened, about 3 minutes. Serve chicken topped with teriyaki sauce.

  1. 1 Combine green onions, soy sauce, eggs, sugar, garlic, and sea salt in a large glass or ceramic bowl. Sift cornstarch, mochiko, and all-purpose flour together into the bowl with green onion mixture; fold until smooth. Add chicken and toss to evenly coat. Cover the bowl with plastic wrap and marinate in the refrigerator for 8 hours to overnight.
