Instructions
- 1 Heat oil in a medium saucepan over medium heat. Add onion, carrots, and garlic; cook and stir until onion is soft and translucent, about 5 minutes.
- 2 Add mushrooms; cook and stir 5 minutes. Stir in chicken stock, salt, black pepper, ginger, and turmeric; bring to a boil and cook until carrots are tender, about 5 minutes.
- 3 Stir in lentils and greens; cook until greens wilt, about 2 minutes. Sprinkle servings with parsley.
