Instructions
- 1 Preheat the oven to 350 degrees F (175 degrees C). Place peanuts on a baking sheet.
- 2 Toast in the preheated oven until fragrant and golden, 7 to 8 minutes. Cool for 5 minutes.
- 3 Grind peanuts, Thai chiles, garlic, dried shrimp, and sugar in a mortar and pestle, or food processor; stir in lime juice and fish sauce.
- 4 Toss papaya, tomatoes, carrot, and green beans with peanut dressing; season with salt and black pepper.
