Instructions

  1. 1 Place cubed watermelon and sugar in a blender; blend for 1 minute. Stir in Champagne. Pour watermelon mixture into a container; cover, and freeze. Stir mixture with a fork every 30 minutes until frozen, about 2 hours.
  2. 2 Remove granita from the freezer; stir well using a fork. Or place granita in the bowl of a food processor; pulse until it reaches desired consistency. Serve in tall glasses garnished with sliced watermelon.

  1. 1 Place watermelon cubes in a single layer on a sheet pan. Freeze at least 5 hours or overnight.
  2. 2 Zest limes; set aside for garnish. Juice limes until you have 2 tablespoons juice.
  3. 3 Place 1/2 of watermelon cubes in food processor with 1 tablespoon honey and 1 tablespoon lime juice. Blend until smooth and creamy and transfer to a large bowl. Repeat with remaining watermelon, honey, and lime juice.

Trim the rind from the watermelon slices, and place the largest slice onto a cake plate. Alternate layering sliced strawberries, slices of cantaloupe, and slices of fresh pineapple; follow with the second-largest watermelon slice. Repeat once more to make a layered fruit stack that looks like a cake.
  2. 2 Thinly slice a few pieces of remaining melon and pineapple. With cookie cutters or a sharp knife, cut remaining fruit slices into decorative shapes. Decorate the cake tiers with the cut fruit shapes and remaining berries.

  1. 1 Puree the watermelon chunks in a blender or food processor until smooth; strain the juices from any remaining solids and set aside, discarding the solids.
  2. 2 Heat 1 cup of heavy cream with the sugar in a saucepan over medium-low heat until warmed. Stir the mint leaves to the warmed cream. Cover the saucepan and remove from heat. Allow the mixture to steep at room temperature for 1 hour. Strain into a bowl; discard the mint leaves.
  3. 3 Whisk the egg yolks in a bowl until gently beaten. Slowly pour the mint-infused cream into the egg yolks, whisking constantly to prevent cooking the egg; scrape the mixture back into the saucepan and place over medium heat. Stir constantly, scraping the bottom while cooking, until the mixture thickens and coats the spatula; pour the mixture through a strainer into a bowl along with 1 cup heavy cream. Mix the watermelon juice into the cream mixture.
  4. 4 Pour into an ice cream maker and freeze according to manufacturer's instructions.
