  1. 1 Preheat the oven to 425 degrees F (220 degrees C).
  2. 2 Combine 1 1/2 cups flour, 1/2 cup cold butter, and salt in a bowl with a fork until very crumbly. Stir in water, 1 tablespoon at a time, just until mixture holds together; stir with a fork. Turn dough out onto a floured pastry cloth; pat into a circle shape. Roll into a 10-inch circle. Invert a 9-inch pie plate onto dough center; flip dough over. Peel off pastry cloth; evenly adjust crust into pie plate if necessary. Fold dough over edge of the pie plate; set aside.
  3. 3 Combine apples, raisins, apple cider, orange juice, and grapefruit peel in a saucepan over medium heat; bring to a simmer. Cook, stirring occasionally, until apples are soft, about 15 minutes. Stir in 3/4 cup sugar, 1/2 crushed graham cracker, cinnamon, and cloves; mix well.
  4. 4 Combine remaining 3/4 cup flour, 6 tablespoons butter, 1/3 cup sugar, and remaining 1/2 crushed graham cracker in a bowl, stirring until streusel looks like fine crumbs. Pour apple mincemeat filling into the prepared pie crust; sprinkle evenly with streusel topping.
  5. 5 Bake in the preheated oven for 15 minutes; reduce oven temperature to 350 degrees F (175 degrees C). Bake until topping is lightly browned, about 30 minutes more. Cool before serving.

  2. 2 Pour apple cider into a saucepan and place over medium heat. Bring to a simmer and let it cook, watching carefully, until the cider is reduced to 1/2 cup. If it reduces too much, add enough water to make 1/2 cup. Set aside until needed.
  3. 3 Add flour, baking powder, baking soda, salt, 1 teaspoon cinnamon, cardamom, and nutmeg to a large bowl. Mix with a whisk until combined and set aside until needed.
  4. 4 Whisk 1/2 cup white sugar, brown sugar, milk, 2 tablespoons melted butter, vanilla extract, and egg together in another bowl until combined. Add the apple cider reduction and the dry ingredients. Whisk together to form a slightly thick batter; do not overmix.
  5. 5 Spoon or pipe the batter into the prepared donut pans, filling them about 3/4 of the way up.
  6. 6 Bake in the center of the preheated oven until the tops are lightly browned, and the donuts spring back slightly to the touch, 10 to 12 minutes. Let cool for 10 minutes in the pans before removing to a sheet pan lined with a silicone baking mat. Cut out any donut holes as necessary.
  7. 7 If desired, while still slightly warm, brush the donuts lightly with remaining melted butter.
  8. 8 To make the coating: Mix 1 cup white sugar and 1 tablespoon cinnamon together in a shallow dish; toss donuts in sugar mixture to coat. Let cool completely before serving.

  1. 1 Pour apple cider into a medium saucepan and bring to a boil over high heat. Cook, without stirring, until reduced to about 1/2 cup, 12 to 15 minutes. Remove from heat and set aside.
  2. 2 While cider reduces, preheat the oven to 350 degrees F (175 degrees C). Generously rub shortening all over the inside of a 12-cup Bundt pan. Sprinkle some flour all over inside of pan over shortening and tap around to completely cover in flour. Tap out excess flour and set pan aside.

Add half of flour mixture to egg mixture and stir to combine. Add remaining half of flour mixture and grated apple and stir until just incorporated, but some lumps still remain, and making sure apples are evenly incorporated (you may need to use a fork to separate apple pieces). Pour into the prepared pan.
  5. 5 Bake in the preheated oven until golden brown and a toothpick inserted in center of cake comes out clean, 50 to 55 minutes. Cool cake in the pan on a wire rack for 15 minutes. Remove cake from pan to a wire rack to cool completely, about 1 hour.
  6. 6 Stir together remaining 1/3 cup granulated sugar and 1 ½ teaspoons cinnamon in a small bowl. Brush melted butter evenly over outside and center ring of cake. Sprinkle top and sides of cake with cinnamon-sugar.

  7. 7 Cut cold dough using a 3-inch doughnut cutter. Gather, roll, and cut any dough scraps. Transfer cut doughnuts and doughnut holes to a second, slightly floured, baking sheet. Refrigerate doughnuts for 20 to 30 minutes.
  8. 8 Whisk 1 cup white sugar and 1/2 teaspoon cinnamon together in a bowl. Transfer cinnamon sugar to a paper bag. Whisk 1 cup confectioners' sugar and 2 tablespoons apple cider together in another bowl. Whisk 1 1/4 cups confectioners' sugar, maple syrup, and vanilla extract together in a third bowl.
  9. 9 Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  10. 10 Cook doughnuts and doughnut holes in batches in preheated oil, turning once, until golden brown and cooked through, about 1 minute per side. Set cooked doughnuts on paper towels to drain.

  1. 1 Peel, core, and chop apples; set apple chunks aside, reserving peels and cores. Combine peels, cores, and 2 cups apple cider in a saucepan and bring to a boil. Reduce heat to low, cover, and simmer 30 minutes.
  2. 2 Meanwhile, combine chopped apples, sugar, remaining cider, and cinnamon stick in a large, non-aluminum saucepan and bring to a boil. Reduce heat to low. Cover and simmer, stirring occasionally, until apples begin to fall apart, 20 to 40 minutes.
  3. 3 Press peel-core mixture through a food mill or sieve placed over a bowl to catch juice. Reserve juice and discard peels and cores. Add juice to cooked apples in the saucepan and return mixture to a boil. Reduce heat and simmer, uncovered and stirring occasionally, until thick, 40 to 60 minutes. Remove and discard cinnamon stick. Stir in pumpkin.
  4. 4 Preheat the oven to 300 degrees F (150 degrees C).
  5. 5 Pour apple-pumpkin mixture into a large, shallow roasting pan.
  6. 6 Place roasting pan into the preheated oven, leaving door slightly ajar. Bake, stirring every 15 minutes, until thick enough to spread, 1 to 1 1/2 hours.
  7. 7 Inspect 6 half-pint jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until apple-pumpkin butter is ready. Wash new, unused lids and rings in warm soapy water.
  8. 8 Spoon apple-pumpkin butter into sterilized jars leaving 1/2-inch head space. Wipe rims and threads clean; top with hot lids and screw bands on firmly.
  9. 9 Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 5 minutes.
  10. 10 Remove the jars from the stockpot and let rest, several inches apart, for 12 to 24 hours. Press the center of each lid with a finger to ensure the lid does not move up or down. Remove the rings for storage and store in a cool, dark area.

  1. 1 Remove orange peels with a vegetable peeler or knife. Cut oranges into slices.
  2. 2 Place orange peels and slices in a multi-functional pressure cooker (such as Instant Pot). Add apple cider, cinnamon stick, cloves, and allspice. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 6 minutes. Allow 10 to 15 minutes for pressure to build.
  3. 3 Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Remove spices and orange peel with a slotted spoon and discard.
  4. 4 Serve mulled cider warm and garnish mugs with orange slices.

  1. 1 In a saucepan, stir together the apple cider, white sugar, brown sugar, allspice, cloves, nutmeg and cranberries. Bring to a boil, then reduce the heat to low and simmer for about 15 minutes, until most of the cranberries have popped. Continue cooking until the consistency is thick.
  2. 2 Ladle into sterile jars to within 1/2 inch of the rim, seal with lids and rings. Process in a simmering water bath for 10 to 15 minutes to seal, or just transfer to containers, cool, and refrigerate. It will last at least a week if it can escape being gobbled up!
