Instructions
- 1 Preheat the oven to 325 degrees F (165 degrees C).
- 2 Combine peanut butter, egg, and vanilla extract in a bowl with a fork. Mix until smooth. Add sugar, whey protein, and salt. Mix well until ingredients are blended together.
- 3 Scoop the mixture out with a tablespoon and roll into 3/4-inch balls. Place onto ungreased baking sheets, about 1/2 inch apart. Flatten each cookie to 1/4-inch thickness with a fork.
- 4 Bake in the preheated oven until golden brown on the edges, about 6 minutes. Let cool for at least 3 minutes before transferring to a wire rack to cool completely.
