  1. 1 Place cranberry juice, sugar, and cinnamon stick into a large saucepan. Bring to a simmer over medium heat, and simmer until the sugar dissolves. Meanwhile, peel the pears, leaving the stem intact.
  2. 2 Place the pears into the simmering juice and cover. Cook until the pears are tender, turning occasionally, 15 to 20 minutes. Once tender, remove the saucepan from the heat, and set aside to cool to room temperature. Turn the pears a few times as they cool so the color remains even.

Instructions

  1. 1 Combine cranberries, cranberry juice, and 1/2 cup of sugar in a small saucepan over medium heat and bring to a boil. Cook until liquid is reduced almost by half, approximately 15 minutes, stirring occasionally. Remove cranberry reduction from heat and let it cool for 10 to 15 minutes.
  2. 2 Once cranberry reduction has cooled, pour it into a food processor along with the strawberry jam and pulse until the mixture is roughly pureed.
  3. 3 Preheat the oven to 350 degrees F (175 degrees C). Line a sheet pan with parchment paper. Unroll puff pastry and place on the prepared baking sheet.
  4. 4 Slice Brie cheese into lengthwise pieces and layer on the puff pastry approximately 1/2 inch from the edges. Spoon cranberry reduction over cheese, followed by white chocolate and walnuts. Sprinkle remaining 2 teaspoons of sugar on top.
  5. 5 Bake in the preheated oven until puff pastry is golden brown, 30 to 35 minutes. Let cool for 10 to 15 minutes before serving.

Instructions

  1. 1 Preheat the oven to 425 degrees F (220 degrees C). Generously grease a 9x9-inch baking dish.
  2. 2 Bring 1 cup white sugar, cranberry juice, and water to a boil in a medium saucepan; boil for 1 minute, stirring constantly. Set syrup aside.
  3. 3 Arrange 3 cups coarsely chopped rhubarb into the bottom of the prepared baking dish.
  4. 4 Combine biscuit mix, 2 tablespoons brown sugar, nutmeg, and cinnamon in a large bowl; stir in milk and oil until becomes a soft dough.
  5. 5 Roll dough out on a floured surface into about a 10-inch square; spread butter over dough. Arrange 2 cups finely chopped rhubarb over butter; sprinkle remaining ¼ cup brown sugar and 2 tablespoons white sugar over rhubarb. Roll dough up, jelly roll-style, gently press seam down to seal, and cut roll into 9 slices.
  6. 6 Arrange slices over rhubarb in the baking dish. Pour cranberry syrup over slices; sprinkle with remaining 2 tablespoons white sugar.
  7. 7 Bake in the preheated oven until biscuit topping is golden brown and rhubarb is bubbling, 25 to 30 minutes.

  1. 1 Pour the cranberry and grape juices into a heavy pot. Add the pectin and stir until dissolved. Bring the juice mixture to a full rolling boil over high heat. Stir in the sugar, and return to a full boil for 1 minute, stirring constantly. Remove from heat, and skim off any foam. Pour jelly into hot, sterilized jars, leaving 1/4 inch headroom. Adjust lids. Process for 10 minutes in a boiling-water bath.
