Instructions

  1. 1 Preheat the oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  2. 2 Cream butter, brown sugar, and white sugar in a large bowl. Beat in eggs, one at a time, then stir in vanilla. Combine flour, baking soda, and cinnamon; stir into the creamed mixture. Blend in the oats, raisins, and toffee bits. Drop by rounded spoonfuls onto the prepared cookie sheet.
  3. 3 Bake in the preheated oven until edges are golden, about 8 to 10 minutes. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Instructions

  1. 1 Preheat the oven to 375 degrees F (190 degrees C). Place the cored apples upright in a shallow baking dish.
  2. 2 In a medium bowl, whip the egg white until it holds a stiff peak. Sprinkle in the sugar, and whip just a bit more. Stir in the cinnamon, raisins, and toffee until evenly distributed. Spoon into the cores of the apples.
  3. 3 Bake uncovered for 5 to 10 minutes in the preheated oven, until the meringue is crisped. Allow to cool slightly before serving.
