- 1 Gather all ingredients.
- 2 Beat cream cheese in a large bowl with an electric mixer until smooth. Gradually beat in confectioners' sugar until fully incorporated.
- 3 Add peach preserves and vanilla; beat until combined.
- 4 Fold in whipped topping until evenly incorporated and smooth.
- 5 Pour 1/2 of the cream cheese mixture into each graham cracker crust and spread evenly. Refrigerate until set, at least 1 hour.
- 6 Garnish the top of the cheesecake with fresh peach slices before serving.
