  1. 1 Pour boiling water over oats and bran cereal, and let stand 10 minutes.
  2. 2 Combine the remaining ingredients, and add oat mixture to them. Pour into two 8 or 9 inch pans.
  3. 3 Bake at 350 degrees F ( 175 degrees C) for 30 to 40 minutes. To make muffins bake about 15 minutes, or until toothpick comes out clean.

  1. 1 Preheat the oven to 350 degrees F (175 degrees C).
  2. 2 Mix 1/2 cup plus 2 tablespoons flour, flaxseed meal, baking powder, and baking soda together in a medium bowl.
  3. 3 Beat butter and sugar in a large bowl with an electric mixer on medium speed until light and fluffy. Add egg white and milk; mix well. Gradually add flour mixture, beating until well blended after each addition. Stir in dried cranberries, cereal, and zest until well blended.
  4. 4 Drop heaping teaspoonfuls of dough 1 inch apart onto ungreased baking sheets.
  5. 5 Bake in the preheated oven until lightly browned, about 14 minutes. Cool on baking sheets for 3 to 4 minutes; remove to wire racks. Cool completely.

  1. 1 Place bran cereal in a blender; blend until pulverized. Transfer to a shallow bowl and mix in lemon-pepper seasoning.
  2. 2 Heat oil in a deep skillet over medium heat to 350 degrees F (175 degrees C).
  3. 3 Place flour in a medium bowl. Whisk egg and milk together in another medium bowl. Dredge a flounder fillet in flour; shake off excess. Dip into egg mixture. Lift up so excess egg drips back in the bowl. Press into crushed bran to coat both sides. Place the breaded flounder, unstacked, onto a plate. Repeat with remaining fillets.
  4. 4 Add fillets to the hot oil and deep fry for 3 minutes, turning once halfway through. Remove to a paper towel-lined plate to drain.
