Instructions

  1. 1 Stir salmon, eggs, lemon juice, capers, salt, black pepper, and cayenne pepper together in a bowl until well-combined.
  2. 2 Crush saltine crackers with your hands into the salmon mixture and mix well. Wrap the bowl with plastic wrap and refrigerate, 30 minutes to overnight.
  3. 3 Dust a plate with half the bread crumbs. Divide salmon mixture into 4 portions and shape into patties; place onto prepared plate and sprinkle remaining bread crumbs atop the salmon patties.
  4. 4 Melt butter and oil in a large skillet over medium heat. Cook patties in hot oil until cooked and heated through, about 5 minutes per side.

  1. 1 Preheat the oven to 325 degrees F (165 degrees C). Generously butter a loaf pan.
  2. 2 Melt 1/4 cup butter in a skillet over medium heat until bubbling. Add onion; cook and stir for 1 minute. Turn off the heat; cool.
  3. 3 Place salmon in a large bowl; mash with a fork. Add cracker crumbs, vinegar, salt, Worcestershire sauce, cayenne pepper, and onion mixture; mix and mash with a spatula or spoon until smooth.
  4. 4 Separate eggs, adding yolks to salmon mixture and adding whites to a clean glass, metal, or ceramic bowl. Stir egg yolks into salmon mixture until well combined.
  5. 5 Whisk egg whites to medium stiff peaks; gently fold into salmon mixture in 2 additions.
  6. 6 Transfer salmon mixture into the prepared pan. Smooth top with a spatula to even out; shake and tap the pan to remove any air bubbles.
  7. 7 Bake in the center of the preheated oven until a toothpick inserted into center comes out clean, about 45 minutes. Rest for 5 minutes, then carefully invert loaf onto a cutting board. Slice and serve.

  2. 2 Blend onion and roasted red pepper in a blender until liquefied; transfer to a large bowl.
  3. 3 Mix salmon, saltine crackers, milk, egg, Worcestershire sauce, cayenne pepper sauce, cayenne pepper, and black pepper with the onion mixture in the large bowl; transfer to the prepared loaf pan.
  4. 4 Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 160 degrees F (70 degrees C), about 45 minutes.

Instructions

  1. 1 Preheat the oven to 400 degrees F (200 degrees C). Line a 9-inch deep-dish pie pan with one pie crust. Set second pie crust aside.
  2. 2 Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool, and chop.
  3. 3 In a medium saucepan, cook onions, garlic, and butter over medium heat until onions become transparent.
  4. 4 Add onion mixture, salmon, and thyme to cooked potatoes. Mash all together with milk, adding just enough to bring about a mashed potato consistency. Season with salt and pepper. Spread evenly into the bottom pie crust.
  5. 5 Place second pie crust over top of salmon mixture. Cut slits into top crust, then pinch edges of both crusts together. Bake on lower rack of oven for 45 minutes.
