Instructions
- 1 Preheat the oven to 400 degrees F (200 degrees C). Line a 9-inch pie plate with thawed pie crust. Keep in refrigerator until ready to fill.
- 2 In a medium frying pan, heat olive oil on medium-high. Add onion and bell pepper. Cook 3 minutes, stirring frequently. Add flour and cook for 2 minutes, stirring frequently. Stir in chicken, salt, nutmeg, and black pepper. Spread this mixture over the bottom of the unbaked pie shell and top with Cheddar and Swiss cheese.
- 3 Combine eggs, milk, and sour cream, and mix until smooth. Pour over the chicken mixture.
- 4 Bake in the preheated oven for 20 minutes. Reduce temperature to 350 degrees F (175 degrees C) and bake, 30 to 35 minutes until inserted knife comes out clean.
