Instructions

  1. 1 Melt 6 tablespoons butter in a large skillet over high heat. Add shrimp; cook and stir in hot butter until browned, about 2 minutes. Reduce heat to medium-low.
  2. 2 Stir in 1 1/2 teaspoons lemon juice, garlic salt, salt, and pepper; cook until heated through, about 1 minute. Remove from heat; stir in remaining 2 tablespoons butter and 1 1/2 teaspoons lemon juice.

Instructions

  1. 1 Combine barley and water in a saucepan. Bring to a boil. Cover, reduce heat, and simmer for approximately 35 minutes.
  2. 2 Transfer barley to a large bowl, and toss with shrimp, corn, bell peppers, green onions, thyme, and lemon zest.
  3. 3 In a small bowl, whisk together lemon juice and oil. Season with salt and pepper. Pour dressing over barley salad, and toss to combine.
