Instructions

  1. 1 Heat a grill pan over medium heat.
  2. 2 Stir coconut milk, 2 tablespoons each cilantro and green onions, lime juice, garlic, ginger, and fish sauce together in a saucepan; bring to a boil.
  3. 3 Brush mahi mahi fillets with enough sauce to coat; place into the hot grill pan. Cook until fish flakes easily with a fork, about 7 minutes per side.
  4. 4 While the fish is cooking, cook remaining sauce at a boil until slightly thickened, 3 to 4 minutes. Remove from the heat and keep warm until fish is done.
  5. 5 Transfer fish to a serving platter. Drizzle warm sauce over top and garnish with remaining cilantro and green onions.

Instructions

  1. 1 Preheat a large saucepan over medium heat for 2 to 3 minutes. Add 2 tablespoons oil, then add panko. Cook and stir until lightly toasted, 2 to 3 minutes. Add garlic and cook until fragrant and panko is golden brown, 1 to 2 minutes.
  2. 2 Transfer bread crumb mixture to a small bowl and add lemon zest, seafood seasoning, and 1/4 teaspoon salt; mix to combine. Set aside.
  3. 3 Wipe out the saucepan and pour in remaining oil. Season fish fillets with remaining salt and add to the pan.
  4. 4 Cook over medium heat until opaque, 2 to 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
  5. 5 Serve fish topped with bread crumb mixture.

Instructions

  1. 1 Fill a large pot with water. Place a sous vide immersion cooker into the pot and submerge. Set temperature to 125 degrees F (52 degrees C) according to manufacturer's instructions.
  2. 2 Cut mahi mahi fillet into 4 equal portions. Sprinkle with salt and pepper. Place fillets into 1 large or 4 small vacuum bags and seal using a vacuum sealer.
  3. 3 Place bags into water and set a timer for 30 minutes.
  4. 4 Combine butter, jalapeño, lime juice, lime zest, and smoked paprika in a small bowl. Set aside.
  5. 5 Carefully remove fillets from the bag and pat dry completely with paper towels.
  6. 6 Heat olive oil in a large skillet over high heat. Add fillets, skin-side up, to shimmering oil. Sear until lightly browned, 30 to 45 seconds. Remove immediately from heat and serve each portion with a dollop of jalapeño-lime butter.

  1. 1 Soak the plank in water for at least 2 hours, longer if possible.
  2. 2 Place mahi mahi fillets in a shallow dish and coat with teriyaki sauce. Cover and marinate in the refrigerator for at least 1 hour.
  3. 3 Meanwhile, combine mangos, bell pepper, green onion, jalapeño pepper, and cilantro in a medium bowl. Season with lime juice, garlic powder, salt, and pepper. Stir until well combined, then cover and refrigerate until serving to blend flavors.
  4. 4 Prepare an outdoor grill for indirect heat. If using charcoal, arrange and light coals under one half of the grill.
  5. 5 Sprinkle olive oil and lemon juice over fish fillets and season with chipotle seasoning, red pepper flakes, and hot pepper sauce. Remove the plank from water and place seasoned fillets on the plank.
  6. 6 Place the plank with fish on the preheated grill over direct heat. Cover and cook for 10 minutes. Move the plank with fish over to indirect heat (the cooler part of the grill); cover and cook until fish is easily flaked with a fork, about 10 more minutes. Serve fish hot topped with mango salsa.

  1. 1 Preheat the oven to 425 degrees F (220 degrees C). Line a rimmed baking sheet with foil.
