Instructions

  1. 1 Season roast with salt and place into a slow cooker. Scatter chile peppers and garlic over roast. Pour in 1/2 cup water and chipotle sauce. Cover and cook on Low for 7 hours.
  2. 2 When roast is almost finished, bring remaining 2 3/4 cups water and rice to a boil in a saucepan. Mix in lime juice and cilantro. Reduce the heat to low, cover, and simmer until rice is tender and liquid has been absorbed, about 20 minutes. Keep warm.
  3. 3 Remove roast from the slow cooker and use two forks to shred meat. Return meat to the slow cooker and allow to sit until some liquid has been absorbed, about 15 minutes. Serve over cooked rice.

Instructions

  1. 1 Combine ketchup, chipotle salsa, orange zest, orange juice, Worcestershire sauce, onion and cilantro in a bowl. Mix chipotle-orange sauce until thoroughly combined.
  2. 2 Turn on a multi-functional pressure cooker (such as Instant Pot®). Add the chipotle-orange sauce and cocktail wieners and stir to blend. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 1 minute. Allow 10 to 15 minutes for pressure to build.
  3. 3 Release pressure using the natural-release method according to manufacturer's instructions, 10 to 15 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  4. 4 Sprinkle cilantro on top and serve immediately, or switch the multi-functional pressure cooker to slow cooker mode to keep warm.

  1. 1 Place bacon in a Dutch oven over medium-high heat and cook until evenly brown. Drain, crumble, and set aside.
  2. 2 Place beef, sausage, and garlic in a Dutch oven and cook over medium-high heat until well done. Drain grease. Mix in onion and cook until tender. Stir in brown sugar, syrup, ketchup, mustard, and chipotle sauce. Reduce heat to medium-low. Bring to a boil and cook for 20 minutes, stirring often.
  3. 3 Mix bacon, baked beans, kidney beans, black beans, pinto beans, great Northern beans, and cannellini beans in a Dutch oven. Continue cooking for 20 minutes.
  4. 4 Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil. Season beans with chili powder and salt.
  5. 5 Place the Dutch oven on a prepared baking sheet on the lowest rack of a preheated oven. Bake for 30 minutes. Let stand 10 minutes before serving.
