Instructions
- 1 Combine graham cracker crumbs and 1/2 cup melted butter in a bowl. Mix until evenly moistened; press firmly into the bottom and sides of a pie dish.
- 2 Beat eggs and white sugar together in a bowl; mix in cornstarch and cake flour.
- 3 Heat milk and cinnamon stick together in a saucepan until just under the boiling point, 5 to 10 minutes; whisk into egg mixture, whisking constantly. Pour milk-egg mixture back into saucepan.
- 4 Cook milk-egg mixture over medium heat, whisking constantly, until thickens, 5 to 10 minutes. Off heat, stir in 2 tablespoons butter and vanilla extract until completely incorporated.
- 5 Pour milk-egg mixture into prepared crust; sprinkle with cinnamon sugar.
