Instructions

  1. 1 Combine water or stock, asparagus ends, and separated leek greens in a large stockpot. Heat over low heat and allow to simmer while you prepare the rest of the ingredients.
  2. 2 Heat butter and oil in a medium sauté pan. Add leek 'whites', onion, and rice; cook and stir until onion begins to color, about 8 minutes. Add 1 cup of warm stock and cook 10 more minutes.
  3. 3 Strain the stock of the asparagus and leek ends and return to the stockpot. Add the contents of the sauté pan to the strained stock along with the asparagus middles, and partially cover the pot. Cook 12 more minutes.
  4. 4 Transfer soup to a food processor and puree. Strain this back into the stockpot. Season and add salt, pepper, and lemon juice to taste. Meanwhile, drop the asparagus tips into boiling salted water and cook until tender (about 4 minutes). Serve the soup with a few asparagus tips on top for garnish.

Sprinkle with chives, and serve.

  1. 1 Cover whole duck with water in large stock pot. Add salt, and bring to a boil. Skim off foam.

  7. 7 Whisk together eggs, black pepper, and cayenne pepper in a medium bowl; whisk in lemon juice until combined. Slowly pour 1 cup broth mixture into egg mixture, whisking constantly.
  8. 8 Whisk another 1 cup broth mixture into egg mixture, then pour egg mixture into the pot. Stir well.
  9. 9 Add chopped chicken and cook until heated through, about 5 minutes more.

Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 15 minutes.
  8. 8 Remove the jars from the stockpot and place them onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight and the lid does not move up or down at all. Store in a cool, dark area.
