Instructions

  1. 1 Preheat the oven to 400 degrees F (200 degrees C). Grease a large loaf pan.
  2. 2 Whisk flour, 1 3/4 cups sugar, baking powder, salt, and baking soda together in a large bowl. Add melted butter; stir until mixture is crumbly. Reserve 1/4 cup each cranberries and mandarin oranges; stir remaining into flour mixture.
  3. 3 Beat milk, sour cream, eggs, and extracts in a separate bowl until smooth; gradually stir into flour mixture until batter is thoroughly incorporated. Pour into prepared loaf pan. Scatter reserved 1/4 cup each cranberries and mandarin oranges on top of batter; sprinkle with remaining 1 tablespoon sugar.
  4. 4 Bake in the preheated oven for 5 minutes; reduce heat to 350 degrees F (175 degrees C) and continue baking until center of bread springs back when touched, 35 to 40 minutes more.

  1. 1 Slice Teriyaki Chicken into small 1/4-inch cubes. Finely dice celery and scallions. Drain mandarin oranges and slice into small pieces. Place the ingredients into a large mixing bowl and set aside.
  2. 2 In a separate large mixing bowl, combine the Teriyaki Sauce ingredients. Mix the sauce and pour into the large bowl with the other ingredients. Mix the salad and serve.

  1. 1 Heat oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until no longer pink in the center and the juices run clear, about 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from the heat and set aside to cool.

  1. 1 Drain the juice from the can of mandarin oranges into a microwave-safe bowl. Eat the oranges, or reserve for other uses. Stir in the brown sugar and orange juice. Cook in the microwave for 5 minutes on full power, then stir and cook for another 5 minutes. Glaze will be runny.
  2. 2 Use to glaze a whole ham every 10 minutes during the last hour of cooking. Also baste a few times after you take the ham out of the oven.
