  1. 1 Preheat the oven to 350 degrees F.
  2. 2 Add a drizzle of olive oil in a pan over high heat. Once hot, add the sausage and cook, breaking it up as it browns, 5 to 7 minutes. Add the chopped peppers and cook until soft, about 5 minutes more. Remove from heat and let cool.
  3. 3 In a large bowl, beat the eggs, Parmesan, hot sauce, salt, and pepper. Add the cooked sausage and peppers. Spray a 12-cup muffin tin with olive oil cooking spray. Pour the egg mixture into the muffin tin.
  4. 4 Bake in the preheated oven for 15 minutes.
  5. 5 Meanwhile, in another skillet, heat the remaining olive oil over medium-high heat. Add garlic, onion, and oregano and cook, stirring, for 2 to 3 minutes. Add tomatoes and simmer to thicken, about 10 minutes.
  6. 6 Remove mini frittatas from the oven. Top each with a spoonful of the sauce and a sprinkle of mozzarella cheese. Reserve the remaining sauce for serving. Continue baking to melt the cheese, 5 minutes more. Top with parsley and basil.

Instructions

  1. 1 Melt butter in a large skillet or saucepan over medium heat. Add sausage and bacon. Cook, breaking sausage into small pieces, until sausage is browned and bacon is almost crisp, about 10 minutes. Add light green onion to sausage mixture and saute until soft, about 3 minutes more.
  2. 2 Stir flour into meat mixture, 1 to 2 tablespoons at a time, until thoroughly combined and mixture is pasty. Cook, stirring often, to remove raw flour taste, 2 to 3 minutes.
  3. 3 Whisk milk into meat mixture, about 1 cup at a time, until combined. Continue to whisk until gravy begins to thicken, about 5 minutes. Turn heat to medium-high, bring gravy to a simmer. Season with cayenne pepper, salt, and black pepper. Reduce heat to medium-low.
  4. 4 Continue to simmer gravy, stirring occasionally, until flavors have blended and gravy is thick, 10 to 15 minutes. Garnish with green onion and cayenne pepper.

Instructions

  1. 1 Heat a large skillet over medium heat. Cook and stir sausage in the hot skillet until browned, 5 to 7 minutes. Drain and discard grease. Stir in flour until dissolved; add 2 cups milk. Stir occasionally until gravy reaches desired consistency, about 10 minutes. Season gravy with black pepper.
  2. 2 Preheat oven to 400 degrees F (200 degrees C).
  3. 3 Place pizza crust on a baking sheet; brush with olive oil. Spread 1/2 of the gravy over the olive oil.
  4. 4 Spray a large skillet with cooking spray; warm over medium-high heat. Whisk eggs and 1/4 cup milk together in a bowl. Pour into the skillet; cook and stir until eggs are set, about 5 minutes.

  1. 1 Preheat oven to 350 degrees F.
  2. 2 Cook breakfast sausage according to package directions; set aside.
  3. 3 In a skillet, brown the hash browns in butter until crisp.
  4. 4 Spread hash browns into the bottom of a greased 9-in. deep dish pie plate (about 1-3/4 in. deep)
  5. 5 Sprinkle cheese into center of the pie plate.
  6. 6 Arrange breakfast sausage around the edge of the pie plate at a slight angle; using cheese to help hold up the links.
  7. 7 In a bowl, combine the eggs, cream, onion powder, salt and pepper; pour into pie plate.
  8. 8 Arrange tomato slices on top of quiche; sprinkle with chives.
  9. 9 Cover sausage at edge of quiche with foil to prevent overbrowning.
  10. 10 Bake for 40-45 minutes or until eggs are set. Let rest 5 minutes before cutting.
