Instructions
- 1 Beat cream, mascarpone, sugar, espresso, and vanilla extract together in a large bowl with an electric mixer until firm peaks form.
- 2 Arrange single layer cookies in an 8-inch cake pan or springform pan, covering the bottom as much as possible; spread ⅓ whipped cream mixture evenly over cookies. Arrange another layer cookies on top, lying flat and touching; spread ½ remaining whipped cream mixture over cookies. Repeat with remaining cookies and whipped cream mixture.
- 3 Smooth top, cover with plastic wrap, and refrigerate until flavors combine, 4 hours to overnight.
