  3. 3 Cut potato in half and scoop flesh into a bowl; discard skin. Mash potato with a fork or potato masher. Transfer about 1 cup mashed potato to a large bowl, saving any remaining for another use.
  4. 4 Mix whole wheat flour, eggs, and applesauce into sweet potato in the bowl until a dough forms.
  5. 5 Turn dough out onto a well-floured surface and roll dough to about 1/2-inch thickness. Cut out shapes using a cookie cutter or cut dough into strips with a pizza cutter. Arrange cookies on an ungreased baking sheet.

  6. 6 Beat together the confectioners' sugar, cinnamon, and milk until mixture can be drizzled. If too thin, add more sugar; if too thick, add more milk. Drizzle icing over top of cupcake. Sprinkle with chopped pecans. Allow icing to dry before serving.

  1. 1 Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start. Let the dough mix for 3 to 5 minutes, until all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan.   2. 2 Make the crust: Pulse the oat flour, almond flour, tapioca flour, sugar, and salt together in a food processor for 5 seconds to blend.
  3. 3 Add the cubed butter and pulse 8-10 times more until a moist, crumbly dough starts to form. Add the applesauce and blend until a soft dough forms.
  4. 4 Divide the dough into 6 equal pieces and use your fingers to press the dough into 6 mini tart pans (or 1 9-inch tart pan if you don't have mini shells), making sure the dough rises slightly above the edges of each pan.
  5. 5 Place the tarts on a rimmed baking sheet and freeze for 15 minutes while the oven heats.

Instructions

  1. 1 Preheat oven to 350 degrees F (175 degrees C). Grease 9-inch square pan.
  2. 2 Combine flour, confectioners' sugar, baking powder, salt, cinnamon and nutmeg in a bowl.
  3. 3 Cream butter in separate large bowl. Beat in egg, applesauce, and vanilla extract.
  4. 4 Mix dry ingredients into wet ingredients. Stir to combine. Add diced apples, caramel bits and walnuts; blend in thoroughly. Pour into greased pan and distribute evenly.
  5. 5 Combine granulated sugar, cinnamon and sea salt for the topping. Sprinkle evenly on top of the batter.
  6. 6 Bake until toothpick inserted in center comes out clean, 30-35 minutes.
  7. 7 Cool completely and cut into 16 bars.
