- 1 Combine reserved pineapple juice and ½ cup water in a saucepan over medium-low heat; bring to a boil, then immediately remove from heat. Stir in couscous until well combined, cover, and set aside until liquid is absorbed and couscous is tender, about 5 minutes. Fluff with a fork.
- 2 Combine pineapple chunks and black beans in a skillet over medium heat. Stir ⅓ cup warm water and taco seasoning together in a small bowl; add to pineapple-black bean mixture. Cook and stir until hot, 5 to 7 minutes. Spoon pineapple-black bean mixture over couscous; serve.
