Instructions
- 1 Heat oil in a deep fryer or large saucepan to 375 degrees F (190 degrees C).
- 2 Whisk flour, sugar, baking powder, cinnamon, ginger, and salt together in a medium bowl until well combined. Beat vanilla yogurt, heavy cream, and egg together in a large bowl until smooth; mix in flour mixture until a sticky dough forms. Fold in peaches until evenly distributed.
- 3 Drop spoonfuls of dough, in batches, into hot oil; fry until fritters are golden brown on all sides, about 5 minutes. Transfer fritters to a paper towel-lined plate to drain using a slotted spoon.
