  1. 1 Mix cream cheese and Cheddar cheese in a microwave-safe bowl. Microwave on high heat, stirring frequently, until melted and smooth, about 45 seconds.
  2. 2 Lay ham slices flat; spread cheese mixture on top. Place one green onion parallel to one edge of each ham slice. Tightly roll ham slices into thin logs around green onions.
  3. 3 Slice the logs into 1/4- to 1/3-inch wide rings. Arrange roll ups flat on a large serving platter. Cover and chill until serving.

  1. 1 Place bacon in a large, deep skillet. Cook over medium-high heat for 6 to 8 minutes, or until evenly brown. Once cooled, crumble and set aside.

  3. 3 Cut pastry into 12 (3 inch) squares. Place a mounded tablespoon of feta mixture in the center of each square.
  4. 4 Moisten edges with water, and fold pastry over filling to form a triangle. Press edges together firmly with a fork to seal. Lightly brush pastries with the egg yolk mixture.
  5. 5 Bake for 20 minutes in the preheated oven, or until golden brown. Serve warm or at room temperature.

  1. 1 Melt butter in a large skillet over medium heat. Add half of the green onions, and cook until wilted. Add crawfish tails, reduce heat to medium-low, and simmer for about 10 minutes. Set aside to cool.
  2. 2 In a large bowl, stir together cream cheese and mayonnaise until well blended. I like to use an electric mixer. Season with hot pepper sauce and Worcestershire sauce until the mixture is pink in color. When the crawfish have cooled slightly, stir into the dip along with butter and the rest of the green onion. Mix well, cover, and refrigerate overnight to properly blend the flavors.

  1. 1 Preheat the oven to 450 degrees F (230 degrees C). Spray the cups of a 12-cup muffin pan with nonstick cooking spray.
  2. 2 Place 4 to 5 frozen potato nuggets into each muffin cup.
  3. 3 Bake in the preheated oven for 10 minutes.
  4. 4 Remove muffin pan from the oven. Using a small glass (e.g. a small juice glass or shot glass) twist and press the tots downward in each muffin cup to create a potato cup. Return to the oven and bake until deep golden brown, about 15 more minutes.
  5. 5 Remove the pan from the oven and distribute pulled pork evenly between the cups. Add 1 tablespoon of shredded cheese to each potato cup, being careful to try and keep it on top of the pulled pork (not down the sides of the muffin cups).
  6. 6 Return to the oven and bake until the cheese has melted, 4 to 5 minutes. Remove from the oven and transfer the potato cups to a serving platter.
  7. 7 Drizzle with BBQ sauce, add a small dollop of sour cream, and sprinkle with green onions before serving.
